Growing up in the Midwest, Chef Ian Voakes developed an appreciation for cooking simple food from the heart. His love for food began early while cooking alongside his mother for as many people could fit around the table.
Chef Ian moved to Chicago to hone his culinary skills and graduated from the Illinois Institute of Art in 2009 with a degree in Culinary Arts. in 2015 he became Executive Chef of Jam Restaurant after three years of tutelage under Chef Jeff Mauro. He continued Jam’s standard of excellence by receiving five additional years of Michelin recognition while under his leadership.
Chef Ian opened 3 Squares Diner in the Uptown neighborhood of Chicago in 2018. As Executive Chef and owner of 3 Squares Diner, the omelet, was recognized by Timeout Chicago as one of the best dishes of the year. Chef Ian strived to make 3 Squares Diner a community gathering spot and hosted numerous events donating proceeds to local non-profits and charities.
In 2019, Chef Ian took the position of President of Restaurant Management at Open Kitchens in Chicago. In addition to his position at 3 Squares Diner, Chef Ian expanded operations in working with park districts in and around Chicago. He helped design a restaurant concept through Open Kitchens while managing the other operations within Open Kitchens.
During the pandemic of 2020, Chef Ian sold his investment in 3 Squares Diner and moved to Denver, Colorado.
